What would Thanksgiving dinner be without the stuffing?   This easy, no-fail stuffing will be a crowd pleaser and is packed with buttery herb flavours!

INGREDIENTS

  • ½ loaf of bread (12 to 14 cups) recommended to use stale or toast the bread.
  • 3 cups diced sweet onion, roughly 2 large onions
  • 2 cups diced celery
  • 6 cloves of garlic, crushed
  • salt and pepper
  • 1 cup unsalted butter
  • 3 tablespoons fresh sage, chopped
  • 3 tablespoons fresh parsley, chopped
  • 3 tablespoons fresh rosemary, chopped
  • 2 1/2 cups chicken or vegetable broth
  • 2 large eggs

INSTRUCTIONS

  • Pre-heat oven to 350 degrees
  • Cut the bread into cube sized pieces, you will then want to leave them out over night or toast them to ensure they have that “crouton” like texture. Or you can buy ready-to-use bread cubes from the grocery store. Using a mixture of different bread types will provide great flavour and variety!
  • Once bread crumbs are ready, place in a mixing bowl and set aside.
  • In a medium sauce pan, add butter until melted. Add in your onions, celery, salt and pepper. Cook until onions and celery are softened.   Mix in all of your fresh herbs.  Cook for a few more minutes and then add in only 1 cup of broth.
  • Pour your butter/herb mixture over your bread crumbs and mix until well coated.
  • In a separate bowl, add in your remaining broth +2 eggs and whisk together. Add that into your bread crumb mixture.
  • Prepare a baking dish with olive oil or non-stick spray to avoid your stuffing from sticking. Add in your bread crumb mixture.
  • Bake for 40 minutes, or until stuffing has browned. To avoid burning you can place a foil tent over the stuffing.

TIP: you can also make this ahead of time, and simply re-heat.
